With five kids in the family, we basically lived at the Little League ballpark every spring once my brothers hit t-ball age. My brain has repressed the one gawky year I played baseball, but I do remember the glory that was the ballpark snack bar. That’s where my nachos addiction started.

But even better than the nachos were the taquitos. The sweet snack bar ladies always gave me a double ladle of the amazing avocado sauce they poured over the crappy Smart & Final taquitos — if you’re old enough, you remember this type of taquito: unroll it to find not shredded meat, but one paper-thin, round slice of a processed, meat-like substance.
The taquito sauce wasn’t guacamole, and it wasn’t salsa. It was thick enough to dip, but thin enough to pour. It had the smooth, bland taste of a fresh avocado, but it had a spicy kick and something that reminded me of lime, but definitely wasn’t lime.
That lime/not lime flavor is tomatillo. The heavens opened and a dove flew down when I discovered the tomatillo. Tomatillo is the secret ingredient that had kept me from perfecting my ballpark avocado sauce copycat recipe all those years.

Budget Recipe: Amazing Avocado Sauce
It costs 38 cents to make 12oz of this Amazing Avocado Sauce!
I scored avocados in Phoenix for 20 cents each, but even if you, like my sister, have to pay $1 per avocado because you live in Pittsburgh, the batch will only cost you $1.18.
I defy you to find 12 oz of anything at the grocery store with the word avocado on it for under a buck.

My very favorite way to eat The Amazing Avocado Sauce is ladled over carnitas. Crispy pork in steamed corn tortillas smothered in this sauce takes me back to my ballpark taquito days.
