New York Cheesecake for 7-inch springform pan (small cheesecake)
Small batch cheesecake using only two 8-ounce cream cheese bricks.
Ingredients
- 16 oz cream cheese softened
- 3/4 cup sugar
- 2 Tbsp flour
- 2 eggs
- 2 Tbsp heavy cream
for Shortbread Crust:
- 1/2 cup flour
- 2 Tbsp sugar
- 1 egg
- 3 Tbsp butter
for Graham Cracker Crust:
- 6 graham crackers 6 whole sheets
- 2 Tbsp butter melted
- 1 Tbsp sugar
Instructions

Make either shortbread crust or graham cracker crust by pulsing all items in food processor until combined.

Press crust into the bottom and up sides of a 7-inch springform pan.

Graham cracker crust does not need to be prebaked. For shortbread crust, prick bottom and sides with fork and bake at 400 for 10 minutes.

For cheesecake filling: puree all items except cream in food processor until well mixed, scraping down sides as needed; add cream and pulse to combine. Pour over prepared crust. (Use hand mixer if food processor not available.)

Bake at 450 for 10 minutes, lower heat to 200 and bake for 50 minutes.

Cool to room temperature (about 3 hours) then chill overnight before serving.

I have this Nordic Ware 7-inch springform pan and use it to make this small cheesecake!
I top the chilled cheesecake with ganache, then chill again to harden the ganache to a fudge consistency.
- Basic ganache is equal weights chocolate and cream. For a thick ganache topping for a 7-inch cheesecake I use 3 oz semi-sweet chocolate chips (half cup, or 1/4 of a 12-oz bag*) and 3 oz heavy cream. Heat cream to a simmer, pour over chocolate chips, wait 5 minutes, whisk to combine.
The 7-inch springform pan is tall, so you can cut smaller pieces and they are still substantial, particularly with a rich cheesecake. 12 servings is ideal but 8 servings is realistic.

*If you’re measuring your chocolate chips for the ganache cheesecake topping by cups instead of weighing by ounces, be aware that NESTLE HAS CHANGED ITS CHOCOLATE CHIPS TO A 10-OUNCE BAG INSTEAD OF A 12-OUNCE BAG!!! This is what we call “shrinkflation” but the problem here is that thousands of recipes have been written that call for a TWELVE OUNCE BAG OF CHOCOLATE CHIPS, WHICH IS 12 OUNCES! So NESTLE IS SCREWING UP TRIED-AND-TRUE RECIPES AROUND THE WORLD, including Nestle’s own Nestle Tollhouse Chocolate Chip Cookies recipe, by shrinking the size of the chocolate chip bag from the typical 12 oz to 10 oz.
